Tridoshic Beet & Greens Salad with Boiled Egg

Ayurvedic Beet Salad
Beet Salad

Ingredients:

  • 1 cup lightly steamed beets, cubed

  • 1 cup blanched spinach & Swiss chard

  • 1 boiled egg, sliced

  • 2 tsp toasted sunflower seeds

  • 1 tbsp chopped fresh mint & cilantro

Dressing:

  • 1 tsp olive oil

  • 1 tsp lime juice

  • 1/4 tsp ground cumin

  • Pinch of salt & black pepper

Method:

  1. Steam the beets and blanch the greens until just tender.

  2. Arrange on a plate with sliced boiled egg and seeds.

  3. Whisk dressing ingredients and drizzle over salad.

  4. Garnish with fresh herbs and serve warm.
