Tridoshic Beet & Greens Salad with Boiled Egg

Ingredients:
1 cup lightly steamed beets, cubed
1 cup blanched spinach & Swiss chard
1 boiled egg, sliced
2 tsp toasted sunflower seeds
1 tbsp chopped fresh mint & cilantro
Dressing:
1 tsp olive oil
1 tsp lime juice
1/4 tsp ground cumin
Pinch of salt & black pepper
Method:
Steam the beets and blanch the greens until just tender.
Arrange on a plate with sliced boiled egg and seeds.
Whisk dressing ingredients and drizzle over salad.
Garnish with fresh herbs and serve warm.
