Ayurvedic - Roasted Vegetable & Paneer Salad

Ingredients:
1/2 cup cubed paneer
1/2 cup roasted zucchini
1/2 cup roasted sweet potato
1/4 cup lightly sautéed kale & arugula
1 tbsp chopped mint
Dressing:
1 tbsp tahini
1 tsp lemon juice
Pinch of fennel powder, salt, black pepper
Warm water to thin
Method:
Roast vegetables & paneer at 375°F for 20 minutes.
Toss with warm sautéed greens.
Whisk dressing ingredients & drizzle over salad.
Garnish with mint.
