Veggies & Paneer Salad

Ingredients:

  • 1/2 cup cubed paneer

  • 1/2 cup roasted zucchini

  • 1/2 cup roasted sweet potato

  • 1/4 cup lightly sautéed kale & arugula

  • 1 tbsp chopped mint

Dressing:

  • 1 tbsp tahini

  • 1 tsp lemon juice

  • Pinch of fennel powder, salt, black pepper

  • Warm water to thin

Method:

  1. Roast vegetables & paneer at 375°F for 20 minutes.

  2. Toss with warm sautéed greens.

  3. Whisk dressing ingredients & drizzle over salad.

  4. Garnish with mint.
